Most food only takes 12 hours to completely digest (some meats can take longer). When you are digesting your food, your blood has all kinds of hormones and such running through it in order to move all the energy from these foods around your body. The types of food you are eating at the time highly influences how much fluxuation of the chemicals, fat, hormones, etc. in your blood.

The result is that non-fasting will cause your blood work to be inconsistent for a non-fasting blood test. A non-fasting test will ball-park where you are with your blood lipids... but not nearly as accurate as with fasting.

After the reccommended 14 hour fast, your blood should be devoid of all food influences... basically, giving a good steady state of your blood profile.
