Hi all,

My husband, recently diagnosed as "glucose intolerant", has a wierd pattern. He'll eat a very high carb/sugar meal - say, a bagel, hash browns,orange juice, etc., and his blood sugar will stay reasonably low - say 140 or less, the entire day. But a day or two later, after supposedly much healthier meals, his blood sugar level will rise to the 200 range. Can there be a delayed reaction to foods?

Any advice is appreciated, as I am one frustrated partner. I'm trying to help, cooking foods that won't elevate his bloodsugar, engaging in a bit of helpful nagging when eating out, but I can't figure out WHAT makes his blood sugar rise! Help!
