I'm married to iron pills... If I stop them, my ferritin goes down again, then my Hgb follows slowly.

It appears you're either losing more iron than your body manages to restore/replenish (heavy menstruation, maybe) or your body fails to absorb the iron you're taking. Some common reasons are low stomach acid, celiac disease, parasites, and H.Pylori infection.

Have you tried different forms of iron? I'm taking Iron bisglycinate chelate, have no side effects. I take 75mg [B]elemental[/B] iron to keep my ferritin level above 50 (dosage calculated by my doctor - 1.5mg elemental iron per 1 kg body weight, though he says I can take more).

Your thyroid fluctuations may be cause by Hashimoto's thyroiditis, when there are swings between low & high levels of hormones. Have you ever had your thyroid antibodies tested?
