Sounds likes you have a wonderful Dr. A normal hemoglobin does not mean you are not anemic, I can't stress this enough. You can be anemic and have a normal hemoglobin. Ferritin detects anemia at early stages. So usually with anemia ferritin will be the first thing that drops, this is because your body is pulling iron from it's stores, then your iron will go as well as saturation. In the end stages your hemoglobin as well as hematocrit will start dropping. Having low ferritin is a very early indicator of anemia. It will raise your hemoglobin numbers a bit but I have been told by a few people so I'm not sure if this is true or not but makes sense, it will raise hemoglobin up higher as well as hematocrit but it will also help the iron get around better with those numbers.

I don't think that you need to worry about having to much hemoglobin, people that live in the mountains have high hemoglobin, I think right now your biggest concern should be getting that ferritin number back up where it needs to be! It seems you are in the beginning stages of anemia. Normal hemoglobin levels are 12.0-16.0. So you are on the low end of the spectrum. It took me about 4 months of taking iron to raise my hemoglobin from an 8.6 to a 14.

Also wanted to add it's not advisable to take iron w/o a Dr's care but since he gave you the go I would take it a few months and go back in for labs and see where you are. I'm sure you know anemia is just a symptom of a larger issue be it bleeding or even Celiac's. You need to find what is causing this.
