if you're eating out, all three are probably pretty heavy on the olive oil. while you can get baked felafel, most places it comes deep fried, so i would eliminate that one first if you're shooting for low fat. my guess is that hummus would be your best bet, as eggplant tends to absorb a lot of oil.

all three can be made lighter pretty easily at home if you like to cook.

of course olive oil is very good for you as oils go, so i wouldn't fret about it too much.

other good middle eastern options are tabbouleh and fattoush, both of which are vegetarian and a bit lighter than the other things you mentioned.
