It does appear that you don't eat enough to support your body. I'm not sure how much you weigh or anything, and I'm not a nutritionist, but I might recommend that you increase your protien intake. For example, the peanut butter that you eat has protien in it, but you really need other protein foods (such as beans and rice--in combination, this is actually a whole protien; lean fish; lean chicken; yogurt with berries (mmmm :) ); or other protien-rich foods). You may be a vegetarian, so the meat may not be your favorite, so the yogurt and beans 'n' rice may be something to consider adding until you find more suitable food sources. And hydrating yourself is a definate plus, as you don't want to overheat.

One more little thing that I have learned: eating moderately, but more frequently (e.g. more meals--like don't skip a meal or a snack ;) ) will actually speed up your metabolism, as you may be putting your body into starvation mode by eating too little. I know that there is a thread on this board where other posters have provided many yummy-sounding, healthy, meals and recipes. I'm not sure what it's title is, but do a search for it on Diet & Nutrition, and you should come across it :) .
