If your trainer recommended light weight training, which you could do every day, then yes, she is wrong. Simply because it doesn't do anything (except burn some calories, but that's what cardio is for). (I'm 100% convinced that she is thinking in the "don't lift heavy weights as a girl or you'll become Arnold Schwarzenegger" style. Totally wrong, us girls just don't bulk up that easily :) )
You could still use the trainer to show you exercises, but I wouldn't pay too much attention to what she says about how many reps etc.

You should do 3 sets of 10-15 reps per exercise. Of course, don't add 20 lbs at once ;) Just gradually increase the weights, till you can only do 10 reps per set.

As for food, if you don't want to go very strict in what you eat, just make sure you get about 150 grams of protein everyday, lots of veggies, lots of unsaturated fat, complex carbs, limit the sugar intake. drink 1.5 liters of water every day. And just keep building up with the calories every week, like your doing, till your at 1800, or more if you don't get fatter.

I know, it's not easy to stop focusing on the scales :) As for measuring, yeah, I get that too, different measurements every time... :) The mirror is a good indicator too, but if you're anything like me, you see different things in the mirror according to your mood :D Your clothes are looser, and you are getting good feedback from others, that's a very good indicator that things are going well :)
