I think you are smart in your approach. Consuming high amounts of protein is the best way to build muscle and reduce bodyfat at the sametime. I don't think 3 a day is too many for your goals. I drink 4-6 whey shakes a day and 2 meal replacements shakes on top of that. The important thing to remember when taking them is the timing. First thing in the morning is good if you dont eat a lot of protein for breakfast. But you definitly want to take one immediately before and after your workouts and 1-2 more within the 3 hour window following your workout.

No protein will not dehydrate you like salt, but if you are not consuming a gallon of water a day at your size, you are hurting your progress. Water is the single most important factor in your training. Make it a priority.
