I'm probably not the best person to respond as I'm not an expert - just a keen gym user (and former National swimmer).

Reading your post, I would say you're doing too much exercise on a daily basis - are you really burning 1000 - 1500 calories purely from direct exercise? How long do you spend exercising? I would think it's difficult to burn this many calories in an hour, in fact I probably didn't burn that many in my 2 hour swimming training sessions - and they were HARD!!

Assuming you are burning 1500 calories a day, and only eating 2000, aren't you losing weight? I would imagine you burn more than 500 throughout the day, which would leave you in a calorific deficit - i.e. losing weight. Also do you take any rest days at all? Exercising 7 days a week is not ideal - really you want at least 1 (preferably 2) rest days per week to let your body recover.
I work out on the cross trainer 3 times a week and I can't imagine what intensity or how many hours in a row you're on it to burn 1000 calories.

I use the cross trainer at an intensity of between 7-10 and I work out for half an hour. According to the crosstrainer, I'm burning around 360 calories. I then do weights for another half hour. No way am I burning 1500 calories.

Quite frankly, if you're burning 1500 and only eating 2000, you're on a quick trip to anorexia.

You should work out 3-5 days a week with half an hour of that time being high enough intensity that you sweat. Do weight training only every other day as your muscles need to rest in between.

On the days that you're not doing an intense workout, a good walk with the dog is enough to give your heart the workout it needs.

Make sure that the calories you're taking in are all smart calories...that means carbs that are low on the glycemic index, lot of veggies and fruit, fish at least 3 times a week and good protein like chicken the other days.
