Squats and deads will make your butt [b]bigger[/b] not smaller. They both stimulate and overload your gluteus maximus muscles (among others). If you stimulate a muscle it wont shrink, it'll grow. It may not get massivly larger depending no the level of overload, but it certainly wont get smaller. It will, however, get firmer. Only losing bodyfat will reduce the size of a fat butt.

Sqauts and deadlifts are very easy to do incorrectly, placing undue stress on your lower back, knees etc, so youre better off getting someone who knows how to do them properly to show you.
