Your doctor is both right and wrong.

The IgM results are useless. They indicate that antibodies are present - but it's such a general test that the antibodies could be relating to something entirely unrelated. It's not that it's a false positive, it's just that it could be positive for so many different things. So they don't necessarily indicate a recent herpes infection. It's possible though.

Your HSV 1 and 2 results are negative right now - you don't have a previous infection. Your doctor is correct in saying that a recent infection would not indicate positive results yet. Go back for more blood work 3 - 4 months post exposure (that's 12 - 16 weeks, not 6 - 8) and your blood should have developed enough antibodies at that point to indicate if you are positive for herpes or not. Sometimes it takes up to 6 months, but that's unusual.

Incidentally, just because your girlfriend doesn't show symptoms doesn't mean she doesn't have herpes. You can have herpes and never show a symptom your whole life, and still pass it on to a partner. Since you are having these tests done, she might consider getting tested too - just to confirm.
